Something of a hybrid, the Santoku style knife has become the do-it-all kitchen knife in many homes. Representing the fusion of a western chef’s knife and a Japanese vegetable cleaver, Santoku is quite possibly the hottest new design in kitchen cutlery in the last several decades. Translated, Santoku literally means ‘three virtues’ or ‘three uses.’ This means it fulfills multiple roles.
New West’s Santoku has a thicker spine than most Santokus. If you prefer a knife with some heft, this knife could be a good match for you. It also features more “belly” on the blade than most Santokus, and therefore, will have a little more rocking motion. And because the blade tends to be thicker than that of a typical Santoku, this is about as heavy duty a Santoku as you will find anywhere. With an HRC rating of 59, the blade will take a razor sharp edge and its thickness will afford it slightly better edge holding than most other Santokus. Just as important, the beautiful Fusionwood handle (handcrafted by artisans in Vermont) feels great in your hand.
